Ribs

Here is the log file describing the details of the rib cooks I have done on the Big Green Egg. The most recent one was today, for Carl and Fred's birthday lunch.  Here is how they looked at the start.  I forgot to put in a foil drip pan, and had to open everything up and put it in after ~10 minutes.




This is after 4 hrs.  They came out very well.

Made two different sauces.  My version of the Mutha Sauce from the book Dinosaur BBQ, and a mustard-based sauce, modified from Carolina Border Sauce found on the Food Network site, which tastes very similar to the stuff from Maurice's Piggy Park.  The mustard-based one was the clear winner for this application.
